Secret of Great Liquor from Chishui River

Water is the most significant material for liquor making. Chishui River flows through Yunnan, Guizhou and Sichuan provinces, and three quarters of it pass across mountains with steep banks and treacherous rapids.
The river is limpid, sweet, within proper pH levels and pure, and the content of calcium and magnesium ions, as well as the water hardness, all meet the standards required for high – quality drinking water.
Meanwhile, the river and the surrounding mountains have created a rather special environment, which is moist, cool in summer, warm in winter, and low in precipitation. Such an environment helps with the growth and enrichment of important micro-organisms suitable for liquor making. With all these elements integrated, a glass of limpid and mellow liquor is finally born.

One Secret of Maotai Liquor:Red Sorghum

The red sorghum is a kind of organic glutinous sorghum unique in Maotai Town. It is the chief ingredient to make Maotai-flavoured liquor. The sorghum granules are solid, full and practically uniform in size; the granules are small and thick, which is beneficial to the multiple roasting required,a key process for making Maotai liquor which keeps the nutrition loss within a reasonable range at each roasting. It is precisely because of this red sorghum that Maotai liquor has a pure flavour. This kind of red sorghum can only flourish given the unique water, soil and climate conditions in Maotai Town. This is one of the reasons why Maotai liquor cannot be replicated.

Another Secret of Maotai Liquor: Maotai Town

Maotai Town, at only 440 meters above sea level, is located in the basin at the lowest point of the Guizhou Plateau. Away from the plateau airflow, it is always cloudy and most of the year, it is rainy, foggy, and immersed in a humid heat. The high temperature period of 35-39 °C may last as long as five months in a year. The special climate, water quality and soil conditions are ideal to the fermentation and ripening of the liquor and play a decisive role in the production, refinement, increase and decrease of the microorganisms of the Maotai liquor.
